1. Roast Leg of Lamb with Garlic and Rosemary
Tender, juicy, and full of flavour, roast lamb is a classic Easter favourite.
Tip from the Butcher: Ask us to score the fat cap for a crispier finish and better flavour infusion.
Ingredients:
- 1.8–2.2kg leg of lamb (ask for it bone-in for maximum flavour)
- 4 cloves garlic, sliced
- Fresh rosemary sprigs
- Olive oil, salt & pepper
Method:
- Make small incisions in the lamb and insert garlic and rosemary.
- Rub with olive oil, salt, and pepper.
- Roast at 180°C (fan) for 1 hour 45 minutes, or until desired doneness.
- Rest before carving and serve with seasonal veg.
2. Honey-Glazed Ham
Perfect served hot or cold, a honey-glazed ham is ideal for feeding a crowd.
Tip from the Butcher: Choose an uncooked gammon joint and we’ll guide you on how to prepare and glaze it at home.
Ingredients:
- 2kg unsmoked gammon joint
- Whole cloves
- 3 tbsp honey
- 2 tbsp Dijon mustard
- 100g brown sugar
Method:
- Simmer gammon in water for 1.5–2 hours.
- Score the fat and stud with cloves.
- Mix glaze and brush over the joint.
- Bake at 200°C for 30 minutes until golden and sticky.
3. Rolled Sirloin Roast with Yorkshire Puddings
Looking to serve beef this Easter? A rolled sirloin joint is rich, tender, and perfect for a Sunday-style roast.
Tip from the Butcher: Let us know how many you’re feeding and we’ll trim and tie the perfect size joint.
Ingredients:
- 1.5–2kg rolled sirloin
- Sea salt, black pepper, olive oil
- For Yorkshire puds: 140g flour, 4 eggs, 200ml milk
Method:
- Season beef and sear all sides in a hot pan.
- Roast at 200°C for 45–60 minutes depending on preference.
- Let it rest while making your Yorkshires.
- Serve with gravy and roasted root vegetables.
