Tip from the Butcher: Ask us to score the fat cap for a crispier finish and better flavour infusion.

Ingredients:

  • 1.8–2.2kg leg of lamb (ask for it bone-in for maximum flavour)
  • 4 cloves garlic, sliced
  • Fresh rosemary sprigs
  • Olive oil, salt & pepper

Method:

  1. Make small incisions in the lamb and insert garlic and rosemary.
  2. Rub with olive oil, salt, and pepper.
  3. Roast at 180°C (fan) for 1 hour 45 minutes, or until desired doneness.
  4. Rest before carving and serve with seasonal veg.

Method:

  1. Season beef and sear all sides in a hot pan.
